Beets are a real treat, especially when you give them a slightly more luxurious twist. One of my best tips is to boil the beets until they’re tender, and then top them with crumbled chèvre and bake them au gratin. Once the cheese has melted and turned a nice golden color, drizzle a little honey over the top. This is a fantastically delicious appetizer that’s perfect for the weekend—or why not for a cozy dinner with friends? The combination of sweet beets, creamy chèvre, and honey is simply magical.
Oven-Roasted Celeriac with Garlic
Celeriac is an underrated root vegetable that more people should discover. I like to roast it whole, wrapped in foil, at a low temperature. Let it sit in the oven for a long time until it becomes really soft and caramelized. Once it’s done, you can mash it up with a little garlic, olive oil, and a pinch of salt. This mash is delicious as a side dish for both meat and vegetarian meals, or simply as part of a larger buffet.
